2017 Ole Miss Farm to Tailgate Pit Roast Chicken

After a week on the road, we’re back at home with another tailgate.  This week we welcome SEC play to Tuscaloosa along with the Ole Miss Black Bears along with an 8pm kickoff.  Those late games make the menu prep a little less hectic, but do make for a long evening.

There’s a good SEC lineup starting at 2:30 and Mississippi State and Auburn starting at 5.  We’ll have the games on and some snacks coming off for the early games.  I’ll be getting the main meal off around 5:30 or so.

This week we’re going to continue in our Man Fire Food quest and do some fire roasted whole chickens.   I’ve teamed up with our good friends Bo and Tonya who own Hidden Valley Farms in McCalla.  We’re going to be using their farm raised chickens as well as some plumbs they’ve saved for us.  These guys have a ton of fresh produce, meats, honey and other wonderful items.  If you’re interested in getting their newsletter, send them an email at busmagik@aol.com and put farm in the subject.

This week here’s what I’m thinking:

  • Pit roasted herb stuffed Hidden Valley Farms chickens with farm fresh fire roasted plum salsa
  • Grilled Leek Summer Salad
  • Fire roasted potatoes tossed with grilled lemon vinaigrette
